Light Supper Salad

For each serving:
Shred the following:

2 cups lettuce
1/4 cup beets
1/4 cups carrots
1/2 cup celery
1/4 cup cucumber
1/4 apple
Place the above ingredients in order on a dinner plate.

Top with:
1/2 mashed ripe banana
5 or 6 crumbled pecans
1/4 cup raisins

This makes an invigorating, highly nutritious meal.

PEACH PORRIDGE
serves 2 or 3
2 or 3 peaches
6-8 dates
1 cup of walnuts (soaked in water 4 hours or overnight)

Wash and cut peaches into fourths. Drain the walnuts. Place all ingredients in food processor and process until the texture of oatmeal. Serve as a refreshing and invigorating breakfast or serve as a salad course for supper. Scoop peach mixture onto individual plates covered with sliced kale. Top with a tablespoon of fresh berries. Yum!

APPLE BREAKFAST
Per serving:
Arrange on a plate:
1 chopped apple
1/4 cup chopped carrot
2 T. raisins
2 T. sliced almonds.
Sprinkle with apple juice or lemon juice.
Top with a sprinkle of cinnamon if desired.
